Potatoes/
Aloo is one of our family-favorite veggies. Even simple recipes made with potato tastes yummm.. Do you love
potato fry??? Here is a very quick and easy version. Enjoy it with rice and rasam.
Ingredients:
- Potatoes - 4 medium sized
- Red Chilli - 1
- Turmeric powder - 1/2 tsp
- Red chilli powder - 1 tsp
- Mustard - 1/2 tsp
- Asafoetida/Hing - a pinch
- Curry leaves - A few
- Salt - As required
- Oil - 1 table spoon
How To Prepare Potato Fry:
- Boil, peel and cut potatoes into cubes.
- Heat oil in a kadai and add mustard seeds, red chilli, asafoetida, curry leaves (in that order).
- Once the mustard seeds start spluttering, add potatoes and fry for a minute.
- Add turmeric powder, mix well and fry for a minute.
- Now add red chilli powder and salt and mix well.
- Fry on low flame for 2-3 minutes and remove.
- Serve hot as side dish to rasam, sambar, lemon rice, coconut rice.
Notes:
- Can add finely cut onion while frying.
- Can add crushed garlic pods to give a nice flavor.
- Can add a tsp of bengal gram or urad dhal while tempering.
- The same recipe can be prepared with ladies finger too.
