Andhra Tomato Pickle Recipe | Thakkali Oorugai | Easy Pickle Recipes


Tomato pickle or Thakkali Urugai – An easy, quick and instant pickle recipe made using ripe tomatoes. This tomato pickle tastes good with most breakfasts like idli, dosa, paratha, upma, adai, and especially with plain hot rice and huge dollop of ghee.  This is not a traditional recipe, but is a good variation of the usual tomato achar and is spicy and tangy.

Ingredients:
  • Tomatoes - 5
  • Garlic - 6-7 flakes
  • Red chillies - 4
  • Tamarind - small gooseberry sized
  • Turmeric - 1/2 tsp
  • Red chilli powder - 1 tsp
  • Methi seeds/Fenugreek - 1/2 tsp
  • Hing - 1/4 tsp
  • Mustard seeds - 1/2 tsp
  • Salt - As required
  • Oil - 3 tbl spn

How To Prepare Instant Tomato Achar:

  • Wash and cut tomatoes into 8-10 pieces.  Grind tomatoes, tamarind and salt to a fine paste without adding water.
  • Add turmeric and chilli powder to this ground paste, mix well and keep aside.
  • Heat about 3 tbl spn oil in a kadai and add mustard seeds.  Once they start to splutter, add methi/fenugreek seeds, garlic, hing, red chillies and let them fry till the garlic turns light brown.
  • Next add the ground paste and mix well.  Adjust salt if required.
  • Let the mixture cook on low flame for about 7-8 minutes or till the oil starts separating from the mixture.
  • Switch off the flame and let it cool.
  • Yummy Tomato Pickle is now ready.  Enjoy with plain hot rice or rotis.
