Coconut Sevai | Thengai Sevai | Easy Idiyappam Recipes


Coconut Sevai or Thengai Sevai is a simple, delicious South Indian breakfast item that is packed with flavor.  It does not have too many ingredients and is quite easy to prepare.   The preparation of this rice noodle recipe is quite similar to how we make coconut rice.  This makes for a good lunch box recipe too.

I have used instant sevai available in the market and cooked as per instructions on the packet.  You can make this coconut sevai recipe with fresh sevai or even with idiyappam.  There are so many healthy variations that can be made with sevai like lemon sevai, vegetable sevai, curd sevai, tamarind sevai, masala sevai that are all equally delicious.

Coconut Sevai, Thengai Sevai


Ingredients:

  • Cooked sevai - 1-1/2 cups
  • Grated coconut - 1/2 cup
  • Salt - as needed

To Temper:

  • Oil - 1 tbl spn
  • Mustard seeds - 1/2 tsp
  • Cumin seeds - 1/4 tsp
  • Channa and urad dal - 1 tsp each
  • Red chillies - 2
  • Groundnuts - a few
  • Curry leaves - a few
  • Coriander leaves - a few for garnish

How To Prepare Coconut Idiyappam Recipe:

  • Cook the ready-made or instant sevai as per instructions given on the packet.  The cooking time differs with each brand.
  • Heat oil in a kadai and add mustard seeds and cumin seeds.  When they start to splutter, add channa and urad dal, red chillies and curry leaves.
  • When dal turns golden brown, add the grated coconut and fry until the raw flavor goes off.  Add ground nuts and salt and mix well.
  • Add the cooked sevai and mix everything well.
  • Garnish with coriander leaves.  Coconut sevai is ready to serve.
  • Enjoy it with papads or chips.
