It is used either at the end of cooking (if using powder) or in the beginning (if using the pieces) to add flavor to a dish. It needs to be used in small quantities only, else the smell can be overpowering.

Ingredients:
- Coriander seeds - 50 gm
- Fennel Seeds - 50 gm
- Cumin seeds - 30 gm
- Cardamom - 8
- Cinnamon - 6, 1-inch sticks
- Cloves - 1 tbl spn
- Pepper corns - 1 tsp
- Staranise - 2
- Nutmeg - 2 small
- Bay leaves - 2
How to Prepare Home-made Garam Masala Powder:
- Heat a kadai/pan and dry roast all the ingredients one by one. Do it on medium flame and stir it constantly to ensure even roasting.
- Let them cool down and grind all to a fine powder.
- Sieve it to remove any big pieces.
- Store in an air-tight container.
