Bendakaya pachadi | Vendakkai Pachadi | Okra Chutney


Bendakaya Pachadi/Okra chutney -- In any Andhra home or a sadya/wedding, a meal is incomplete without a pachadi.  Pachadis or chutneys are a great way to sneak in veggies in your menu.  If, on any day you are feeling lazy or have to cook just for yourself, this dish comes in handy because it is so easy to prepare and hardly takes about 15-20 mins max.

It is spicy, tangy and tastes yummy with plain hot rice and ghee.  This recipe can be prepared using other veggies too like brinjal, snake gourd, tomatoes, beerakaya or ridge gourd.

Ingredients:

  • Ladiesfinger - 1/4 kg
  • Onion - 1 medium-sized, finely chopped
  • Red chillies - 5
  • Dhaniya/Coriander powder - 1-1/2 tsp
  • Urad dal - 1 tsp
  • Tamarind - a small lemon sized
  • Salt - As per taste
  • Oil - 4 tbl spn

How To Prepare Bendakaya Pachadi:

  • Wash and dry the ladiesfingers and cut them into 1-inch pieces and keep aside.
  • Heat 1/2 tsp oil and fry red chillies and the urad dal (until it turns golden brown), separately and  keep aside to cool.
  • Heat 3 tbl spn oil in a kadai and fry the ladiesfinger pieces until the stickiness reduces and the pieces are properly fried.  Remove excess oil from the pieces and take them onto a plate, let them cool down.
  • Grind all the ingredients except onion -- fried ladiesfingers, fried red chillies and urad dal, dhaniya powder, tamarind and salt into a coarse paste.
  • Heat the remaining oil in the kadai and add mustard seeds.  Once they start to splutter, add the onions and fry until they turn light brown.
  • Now add the ground paste and mix well and fry on low flame for about 2-3 minutes and remove from fire.
  • Enjoy with plain hot rice and ghee.
