Carrot Talimpu or Carrot Turumu (grated) Talimpu is a simple and quick stir fry that is quite delicious and healthy too. It takes less than 10 minutes to make this colorful & yummy stir fry. I have used only carrots here, but you can add other veggies too, like cabbage or beans, and make this stir fry.
Ingredients:
- Carrot - 2
- Onion - 1
- Green chillies - 2 (finely cut)
- Ginger - 1/4 inch (cut into small pieces)
- Turmeric - 1/4 tsp
- Salt - As per taste
For Tempering:
- Channa dal/Bengal gram - 1 tsp
- Red chilli - 1
- Mustard seeds - 1/2 tsp
- Oil - 2 tsp
How To Prepare Carrot Talimpu:
- Wash carrots and finely grate them. Cut onion into small square pieces.
- Heat oil in kadai, add mustard seeds. When they start spluttering, add the red chilli and channa dal and fry.
- When the pappu starts getting light brown, add the ginger pieces and fry for 4-5 seconds. A good smell comes from it.
- Now add the grated carrot and onion and fry for sometime on medium flame.
- Add turmeric and salt and fry for a few more minutes.
- Check if the carrot is cooked and remove from fire.
- Yummy & colorful carrot stir fry is ready. Serve with plain hot rice or roti. Can be used as a sandwich filling too.
