Carrot Talimpu | Carrot Turumu Talimpu | Grated Carrot Stir Fry


Carrot Talimpu or Carrot Turumu (grated) Talimpu is a simple and quick stir fry that is quite delicious and healthy too.  It takes less than 10 minutes to make this colorful & yummy stir fry.  I have used only carrots here, but you can add other veggies too, like cabbage or beans, and make this stir fry.

Ingredients:

  • Carrot - 2
  • Onion - 1
  • Green chillies - 2 (finely cut)
  • Ginger - 1/4 inch (cut into small pieces)
  • Turmeric - 1/4 tsp
  • Salt - As per taste

For Tempering:

  • Channa dal/Bengal gram - 1 tsp
  • Red chilli - 1
  • Mustard seeds - 1/2 tsp
  • Oil - 2 tsp

How To Prepare Carrot Talimpu:

  • Wash carrots and finely grate them.  Cut onion into small square pieces.
  • Heat oil in kadai, add mustard seeds.  When they start spluttering, add the red chilli and channa dal and fry.
  • When the pappu starts getting light brown, add the ginger pieces and fry for 4-5 seconds. A good smell comes from it.
  • Now add the grated carrot and onion and fry for sometime on medium flame.
  • Add turmeric and salt and fry for a few more minutes.
  • Check if the carrot is cooked and remove from fire.
  • Yummy & colorful carrot stir fry is ready.  Serve with plain hot rice or roti.  Can be used as a sandwich filling too.
