Begun Bhaja | Aubergine Fry | Bengali Style Fried Eggplants


Brinjal or eggplant is called Begun in Bengali and Bhaja means Fry.  Begun Bhaja or Fried Eggplant is a very simple Bengali dish, which does not require any spices other than turmeric and a little salt.  It is part of daily menu in most Bengali homes and is usually served with rice and dal, paratha or luchi.

Ingredients:

  • Brinjal : 1 medium size
  • Turmeric powder:  1/2 tsp
  • Salt - As per taste
  • Mustard oil:  4-5 tbl spn

How To Prepare Begun Bhaja or Brinjal Fry:

  • Wash and cut brinjal into round 1-inch slices.
  • Mix turmeric powder and salt and apply on both sides of the cut slices.  Set aside for about 10 minutes.
 

  • Heat mustard oil in a kadai to smoking point and slide the brinjal pieces gently into the oil and fry them till golden on both sides.

  • Take out from the kadai and place on a tissue paper to drain the excess oil.
  •  Delicious brinjal fry is ready to serve.
