Bandhakopir tarkari or Bengali cabbage curry is a simple and delicious side dish cooked in typical Bengali style. Bandhakopi means cabbage and torkari means any side dish with vegetables in it. Go ahead and try this awesome dish.. am sure you will like it.
Ingredients:
- Potatoes - 3 medium sized
- Cabbage - 1 cup
- Peas - 1/2 cup
- Onion - 1
- Tomato - 1 chopped
- Turmeric - 1/2 tsp
- Cumin Powder - 1/2 tsp
- Ginger paste - 1/2 tsp
- Red chilli Powder - 1/2 tsp
- Bay Leaf - 1
- Garam masala powder - 1/4 tsp
- Salt - As required
- Oil - 3 tbl spns
How To Prepare Bandhakopir Tarkari:
- Cut onion into thin, long pieces. Chop cabbage into fine long pieces, wash and keep aside. Peel and cut each potato into 6 pieces, wash and keep aside.
- Heat oil in a kadai and fry potatoes first. When they start turning light brown, remove them and keep aside.
- In the same oil, add bay leaf and onions and fry till onions turn light brown.
- Then add turmeric and fry for a few seconds.
- Add the ginger paste, jeera powder, chilli powder, salt, tomato pieces and a little water and stir fry for a few minutes.
- Add cabbage and cook for 3-5 minutes. Finally put in peas and potatoes and fry for a few minutes, add enough water to cover the veggies and let it boil for some time. Check if the potatoes are cooked, add garam masala powder and mix well and remove from fire.
- There should not be absolutely any water left in it as it is a dry curry.
- Enjoy it with roti, paratha or plain rice.

loved it.. thanks a lot Hina for sharing this recipe. I want to tell you that i am always paranoid about cooking this as i never ever get it right, but this time I followed your recipe to the T and bingo! It turned out great!
I just add a dab of desi ghee (while adding the garam masala at the end) and my husband loves it even more! Ans a pinch of sugar - the typical bong practice! :) Thanks again
