Potato and cauliflower - one of the best combos to make a side dish interesting. Aloo Gobi fry is a very simple and tasty dish which is very easy to prepare, minimal spices and hardly takes any time. This version of aloo gobi fry is a part of breakfast/dinner in many bengali homes. Can be served with roti or paratha or as a side dish with rice and dal or any variety rice.
Ingredients:
- Potatoes - 2 medium sized
- Cauliflower - 1 small size
- Black cumin/kalo jeera - 1/4 tsp
- Green Chillies - 4 or 5, slit halfway
- Turmeric - 1/4 tsp
- Salt - As required
- Oil - 1 tbl spn
How To Prepare Aloo Gobi Fry:
- Wash, peel and cut potatoes into small cubes and cauliflower into small florets.
- Boil the potatoes and cauliflower till they are half cooked and keep aside.
- Heat oil in kadai and add the black cumin/kalo jeera. Once they start crackling, add the already boiled potatoes and cauliflower and the chillies and fry for a few minutes.
- Add the turmeric and salt and mix well. Keep frying in low flame till the potatoes and cauliflower turn light brown, check if cooked and remove from fire. (take care not to overcook the veggies as they are already boiled).
- Serve with rotis and parathas or rice and dal.
